Mousse source of asparagus

・asparagus (thin thing)… About 20 ・egg yolk … 1 piece ・water … 15cc ・butter … 50g ・salt and pepper … Proper quantity ・lemon fruit juice … 10cc ・fresh cream … 50cc

1. dissolve butter in hot water.

2. The egg yolk and water are added to the bowl and it mixes it.
It beats it putting it on warm the vessel containing sth in hot wate.

  

3. It melts and butter of procedure {1} is beaten little by little in addition to {2}

 

4. So as not to cool procedure {3}, it keeps it warm.

5. Asparagus is boiled with the hot water that adds a little salt.
(After it boils it, moisture is cut. )

 

6. The lemon fruit juice, the salt, and the pepper are added to the source of procedure {4} and the taste is adjusted.
It mixes it adding the beaten fresh cream.

  

7. Asparagus is dished up to the plate, and the source is affixed.
